Ventresca of Bonito del Norte is the most delicate part of the WhiteTuna fish and thus it is most valued. This moist fillet of tuna has is arranged between layers of salt, where they are stored closed and under pressure for 6 months to mature. Later they are fileted in a six-step process. Its unique taste is synonymous with the Cantabrian Sea. The loins are treated, hand-packed and left to mature for at least two months before they are sold onwards to clients. The end result is an exceptional high quality gourmet product.
